This is a high intervention citrus juice co-fermented Gesha variety coffee from the Pitalito municipality of Huila, Colombia, produced by Jaider Hermida Cárdenas & Johan David Calderón.
Think of this coffee as a portal – an entryway to all things co-fermented. If you have been on the fence about buying a co-fermented coffee, this is the perfect bridge. It’s distinct but not loud or obnoxious by any means.
The flavor profile is distinctive, with strong flavors of ginger, lime, lemon, lychee, and rosewater.
Flavors like ginger chews, menthol, mint, lemon candy, hibiscus, and raspberry. With even more candy-like flavors like cereal milk, fruit loops, butterscotch, and peanut brittle. To me, there is a distinct relation to 7up in this cup. On the scale of Sprite to ginger ale, 7up sits somewhere in the middle, with not too much sweetness and extra limey notes. There are also hints of jasmine, basil, and watermelon rind in this coffee.
Pour-over is likely your best friend for this coffee, not just for flavor but economic reasons. If you do have some extra change to spare, put this in your espresso hopper, you will not be disappointed.
